Regional Mexican Cuisine

In this class, we look to our southern neighbor for culinary inspiration. We will explore three regional Mexican cuisines: the North Pacific brings us Beef Fajitas and Queso Fresco; the South Pacific features Black Mole and Corn Tortillas, Roasted Red Peppers and Zucchini Salad; and the meal ends with Rice Pudding, a dessert specialty from the Bajio.
