Russian Tea Cakes

INGREDIENTS

1 cup butter

1/2 cup confectioner’s sugar

2 1/2 cups cake flour

1 teaspoon vanilla

1/4 teaspoon salt

1 cup finely minced pecans



PROCEDURE

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Cream together the butter and sugar.

  3. Add cake flour, vanilla, and salt combine well.

  4. Mince the pecans

  5. Add pecans to the dough and mix well. The consistency will be crumbly.

  6. Form into 1 inch balls and place on a cookie sheet and bake for 12-15 minutes on top rack of oven (this is important as the bottoms are prone to burning.

  7. Place hot cookies into a bowl of confectioner’s sugar, coat thoroughly, and place on cooling rack. If the cookies are too cool, the sugar will not adhere well.

  8. Enjoy with a tea or coffee - these will melt in your mouth and only a few will do the trick as they are also very rich!
